An easy and filling breakfast to start the day right!
Ingredients

4 cups of rolled oats *see note

3 cups of your choice of plant-based milk (almond, oat, coconut, soy, etc.)

1 cup of blueberries for cooking

¼ cup of coconut oil
-
¼ cup of maple syrup
-
1 tablespoon of ground cinnamon

¼ teaspoon of ground nutmeg

¼ teaspoon of salt

¼ cup of blueberries
-
8 strawberries, sliced with the stems removed

Thinly sliced almonds
-
Ground cinnamon

Directions
Rinse the blueberries and strawberries with cold water and slice the strawberries.
In a pot, melt the coconut oil and add the blueberries. Cook for 2 to 4 minutes, until the blueberries are softened.
Add the milk, maple syrup, cinnamon, nutmeg, and salt. Cook for 2 minutes.
Add the oatmeal and cook for 2 to 5 minutes until the milk is absorbed by the oatmeal. Do not overcook or the oatmeal will become a paste.
Recipe Note
Assembling the Oatmeal:
Divide the mixture into 4 serving bowls. Add a tablespoon of blueberries and two sliced strawberries to each bowl. Sprinkle with thinly sliced almonds and cinnamon. Enjoy!
Notes and Tips
Quick oats or rolled oats? Do not use quick oats for this recipe as the oatmeal will become very pasty. It is best to use rolled oats .
